Rice Salad

We went on a picnic to the beach last Saturday, and took drinks, sandwiches, and rice salad to eat.  I thought it was a marvellous treat to be eating this rice salad as we were sitting in the midst of sand, sea and holiday makers.

Step one:  Cook your rice

Step two:  Once its cooked, strain out any extra water through a collander, and rinse cold water over the rice.

Step three:  Leave the rice to cool, then mix in chopped tomatos, chopped mozzarella, chopped hard boiled egg, and a tin of tuna.  You can also add in caper, gherkins, anchovies, pickled onions, capsicum, and whatever else takes your fancy.
