Day 2 of my new morning routine, the 5am club. This is day 2 of my 21 day challenge. And I have a confession. I didn’t sleep at all last night. I had difficulty with breathing. So I wasn’t able to get myself up early today. When I did get up, i felt light headed and went back to sleep again. So I didn’t do my early morning routine.
When I did eventually get up, after I got something to eat for lunch, I did at least go outside for some exercise. In my video that I took today, you can see some footage of my walk. The sun was glittering on the water, and the flowers looked so vibrant. Did you spot that purple butterfly as it flew away? You can hardly see it for the glaring sun behind it. Those blue bells really are a sight to behold.
I seriously thought about giving up, already at just day 2. But after an internal battle I decided to own up to it, and just let it be. It is what it is. And tomorrow, day 3, will be a fresh day. At the very least I can find satisfaction today in the fact that I ate lots of vegetables and home cooked popcorn too, and fruit. So doing what I can to build my body up with nutrients and minerals and wholesome food. For dinner tonight I boiled some frozen sweet corn and french beans in the sauce pan. And with the water in the pot, I could see it was a green colour and I assume full of the nutrients from the french beans at least, so I didn’t want to throw it away. So it utilise it, I got my couscous out of the cupboard and poured that into the water already in my saucepan, so that the couscous could soak up all that goodness, while that water was still hot. I also added to that water the rest of my vegan minestrone sauce that I had batch cooked earlier in the week, to add some flavour to the couscous. Once the couscous had expanded fully, I then added some freshly chopped parsley, coriander, tomatoes, tore up some basil leaves, and what a glorious fresh and strong aroma the basil leaves had. Then I sprinkled with turmeric. I was well fed at least.
